Hello!  Cibon has been open on Rosemont Garden for about three months now and we are so thrilled to be part of the food and drink scene in Lexington.  We have expanded our hours as demand has encouraged us and we have some fun things in store for the next couple of months, so please read on!

Our staff has an incredible combined background in wine, cheese, fine dining, and culinary service that is unmatched, and we couldn’t be happier to have everyone on board!

Brady curates the 120+ bottle wine inventory and crafts the Wine Bar menu with a rotating list of ever-changing wines by the glass that are unlikely to be found at other locations. You can choose from our by-the-drink menu, or feel free to browse our wine racks in the Market and select your own bottle for purchase and we will pour it for you.  He has stocked the shelves with wines from all over the world including some sake and port and even some non-alcoholic options.  Also, we offer discounts on bulk purchases – 5% for 6 bottles and 10% for 12 bottles.  We also can special order many wines if you are a fan of a particular winery.

Our spirits department is growing weekly and is anchored by a varied offering of distinctive bourbons that every home bar needs and a few special bottles, too.  But we’re not just about bourbon!  You can find all types of spirits here including aperitifs, liqueurs, and even a delicious vodka made from sheep milk!

Our Wine Bar menu also includes cheese & charcuterie and other small plates if you need an accompaniment to your wine or even want a full meal.   We’ve got a wide selection of cheeses and meats that we rotate onto our menu every week and we’ve come up with some popular plates featuring many of our specialty foods from the Market.  You can walk in or are more than welcome to make a reservation.  

Speaking of…you’ve got to check out the Market!  We’ve got you covered for gourmet products that will make your special event pop, your holidays sparkle, or if you just want a delicious everyday snack.  Laura has stocked our cases with local favorites like Olivia’s Beer Cheese and Capriole goat cheeses, salumi made from wagyu beef raised right here in Kentucky and super-special items like Ibérico de Bellota (acorn-fed) pork and hard to find Guanciale.  We’ve got extraordinary products like Pepe Saya cultured butter (are you on the butter-love train yet??), blue cheese made from Water Buffalo milk (what??) and triple cremes to make you swoon.  Of course our case is stocked with must-haves like fresh mozzarella, buffalo mozz and the quintessential crowd fave – BURRATA.  And don’t forget the classics like Prosciutto di Parma, hot or sweet coppa, and patés, plus classics like Gruyere, Roquefort, Cheddar and more!  Other than the pre-packaged items, everything in our case is available cut-to-order so ask for just the amount you need!  We got you! 

Is your mouth watering yet?  Well get ready to taste some great stuff!  We had our first tasting class in August and we are off to a great start with more classes and events in September and beyond.  Bourbon appreciation classes are next on the agenda as part of our expanding courses and events and our first Raclette dinner is in just THREE weeks (Oct 7th) so call now to reserve your spot! 

The holidays are right around the corner and we are receiving new and interesting products every week.  We will have a large assortment of decadent cheeses and meats and lots of ideas for beautiful gift baskets, hostess gifts and stocking stuffers.  If you are looking for a special item for your holiday table, please let us know soon so we can order it in for you.  After all, Cheesin' is the Reason for the Season and Cibon is your headquarters for specialty foods.

September 23 – Artisan Cheese Basics

Is an artisan cheese counter a little bit intimidating?  Let our very own Queen Brie (Laura Conrow) introduce you to some easy ways to navigate any cheese shop.  We’ll talk about how cheese is made and taste cheeses made from cow, sheep, goat and even water buffalo!  Class includes paired wines.  $55 per person + tax and 20% auto gratuity. 

October 7 – Queen Brie Raclette Dinner

 If melty cheese is your jam, this dinner is for you!  Fall is here and it’s finally Raclette season!  Raclette is a traditional Swiss meal where we use large melting machines to scrape melty cheesy goodness right off the wheel onto your waiting plate of steaming potatoes.  Not only do we include traditional accompaniments of cornichons (sour pickles) and pickled onions, we make it a complete meal experience by adding a variety of cured meats, a big green salad and some non-traditional accompaniments like pineapple, mushrooms and sliced apples, fresh baguettes and butter, and dessert!  Specially paired red and white wines are sold separately and can be purchased by the bottle for $40 or by the glass for $15.  $45 per person for the meal + tax and 20% auto gratuity.

October 15 - Wine Basics 

Our Wine Basics course (taught by resident Wine Expert James King) is tailored for beginners eager to dive into the world of wine!  Enjoy a fun and informative journey where you’ll explore a variety of styles and classic grape varieties.  This two-hour class offers hands-on experience with tasting, while also teaching essential techniques such as swirling, smelling, and sipping like the pros.  Learn the fundamentals of proper serving and storage, along with basic wine and food pairing principles, ensuring your wine experiences are always top-notch. There will be lots of wine and plenty of cheese and charcuterie. $60 per person + tax and 20% gratuity. 

October 29 - Brunello Fest

Please look out for this special event to be posted in early October.  Overall, we love wines from the small Tuscan town of Montalcino so we are scheming to do a night of Brunellos (and paired light bites) late in October.  More information on this will be available soon!

Also, please remember, Cibon has a beautiful event space that is available to rent!  Also, you can rent out the entire store for your larger events including holiday parties.  We also do beautiful party platters of any size for your special events and gift and holiday baskets.
